The Sansglu take
The place
The Choclo works out of a stall inside the San Jose Downtown Food Hall on East Santa Clara Street. Founder Pilar Rengifo built it around Colombian breads that never needed wheat in the first place, and it now supplies dozens of Bay Area retailers alongside the counter.
The gluten-free setup
The bakery is certified gluten-free by the Gluten-Free Food Program, a third-party certifier, and has held that certification since 2025. Its own site names cassava starch, cornstarch, and corn flour as the primary ingredients, so the baking is naturally gluten-free rather than substituted. Its listing also carries a current dedicated gluten-free badge.
What to order
Look for the pandebono and the almojabana, the cheese breads that made the place, plus pandeyuca and bunuelos. They are best in the first half of the day, straight out of the oven.
The move
Go before the lunch rush, when the cheese breads are still warm and the food hall is quiet. If you are not downtown, the same products turn up at Bay Area retailers; call 650-380-1961 to ask who is stocking them this week.
