Weir is still listed on Copita's team page today as Maestra de Cocina, and Mindel as Propietario. The kitchen runs a 100% gluten-free menu, stated directly on Copita's own site rather than a third-party badge alone.

Copita's own menu carries a "100% gluten-free" tag across its lunch, dinner, dessert, and weekend brunch sections, and Verified Celiac Community Reviews separately lists the kitchen with a dedicated badge and an owner statement. Corn tortillas are made by hand in house. That claim is kitchen- and menu-scoped, not premises-wide: the bar still pours regular Corona, Pacifico, and Modelo alongside one gluten-free option, a Calrose Crisp Rice Lager, so a beer order needs a specific gluten-free request.
What to order
Quesabirria, the 24-hour carnitas, and the Blue Masa Huarache are the named draws on the current menu, all built on the hand-made corn tortillas.
The move
Ask for the Calrose Crisp Rice Lager by name if you want a gluten-free beer with dinner. The rest of the bottled beer list, Corona and Modelo included, is not gluten-free.
