The place
The Coop is the Solana Beach storefront of Gluten Freedom Baking Co, tucked into the Lomas Santa Fe plaza. It runs as a bakehouse and pantry: fresh pastries and breads up front, sandwiches and rotating pantry goods behind them.
The gluten-free setup
The kitchen is dedicated gluten-free, and it goes further than most: corn, soy, and peanut are kept out as well. Celiac diners report a dedicated pizza oven and a no-outside-food policy, and the baking happens in a dedicated commercial facility.
What to order
The cinnamon rolls are the review-section favorite and move fast. The menu also lists sourdough, pastries, and hot sandwiches, with pizza from the dedicated oven.
The move
Go in the morning. Hours run Wednesday to Friday 8am to 4pm and weekends 8am to 3pm, closed Monday and Tuesday, and the bake sells down as the day goes on.
