The place

A proper Italian spot on Calle de Manuela Malasaña doing wood-fired pizza and fresh pasta, run entirely without gluten. A similarly named Italian restaurant on Calle Caracas is a separate, conventional business; this is the sin gluten one.

The gluten-free setup

The whole kitchen and menu are gluten-free, and the house rule is that only certified gluten-free ingredients come through the door. They also decline outside food and containers, a policy kept specifically to avoid cross-contamination. Diners report a dedicated fryer.

What to order

The menu lists a Tartufata pizza built on white truffle cream with fior di latte, fresh truffle, ricotta and mushrooms. Recent diners single out the lasagna and the pistachio dessert.

The move

Book through the reservation page on their site; Malasaña fills up on weekends. Double-check you're headed to Manuela Malasaña 7, the gluten-free location.
