The Sansglu take

The place

Chambelland holds a quiet corner of the 11th at 14 Rue Ternaux, steps from the Marche Popincourt. Nathaniel Doboin and baking-school founder Thomas Teffri-Chambelland opened it in 2014, and it runs like a classic Paris boulangerie: labeled loaves behind glass, trays of financiers, small tables on the pavement. The brand has since spread across Paris and into Belgium and Luxembourg, but this corner is the original.

The gluten-free setup

The entire bakery is gluten-free, and so is the supply chain behind it. The founders built their own mill in Malijai in the Alpes-de-Haute-Provence, and it has only ever milled rice, so the flour arrives free of cross-contact before baking even starts. Current community reports describe the bakery as dedicated gluten-free, and recent celiac reviews report no symptoms.

What to order

The counter lists the pain du village, a rice-flour sourdough sold by weight, alongside a five-grain loaf, focaccia in several flavors, and pastry-case classics like the lemon tart. Do not come expecting a croissant: the house skips laminated pastry rather than sell a poor imitation.

The move

Come in the morning, buy a whole pain du village to carry through the rest of the trip, and add a financier for the walk. Current listed hours include Sunday, so it works as the weekend bread run.
