Dedicated gluten-free bakery in Lemont with its own kitchen and fryer. The counter opens to an operation built entirely around GF from start to finish, staffed to know the protocol inside out.
The gluten-free setup
Separate GF kitchen and dedicated fryer. Every item on the menu is gluten-free, with no wheat flour in the building. The whole operation is isolated to GF production only.
What to order
The cinnamon loaf and brioche loaf are the anchors here. French baguette if you want structure for sandwiches. Cinnamon rolls if they're available. The stuffing and stuffing cubes work for holiday cooking or sides when you're tired of the math.
The move
Go early in the day. Baked goods sell through, and the good stuff moves fast. Call ahead if you want a specific loaf or roll reserved.
