The Sansglu take
The place
This is the gluten-free outpost of the Florence sandwich institution, opened in November 2025 on Via della Moscova at the corner of Via Statuto, a short walk from Brera's galleries. Same marble counter and queue culture as the regular shops, but this storefront exists so celiacs can eat the schiacciata everyone posts about.
The gluten-free setup
The store is fully dedicated: the brand launched it as its first entirely gluten-free location, and nothing gluten-containing is sold on site. The schiacciata bread comes from a dedicated gluten-free lab and is baked off in-store through the day. The other Milan locations, including the train-station shop, are not gluten-free; this address is the safe one.
What to order
The menu lists the brand's signature schiacciate in gluten-free form, La Favolosa included, alongside a dozen others, a gluten-free truffle cream, and gluten-free beers. Celiac diners this summer describe the bread as hard to tell from the original.
The move
The brand's shops draw long lines, and this one inherits them. Go off-peak, or order through the delivery apps where the store keeps its full gluten-free menu listed. Double-check you are at Via della Moscova 52 before ordering; only this store is dedicated.
