The place
GluFree has held the corner of Via Curtatone near the Policlinico since 2014, and the story is the draw: founder Daniele Arcidiacono moved up from Catania, fell in love with a woman with celiac disease, and opened the bakery for her. Three people in his own family are celiac. The case reads like a Sicilian pasticceria, not a health-food shop.
The gluten-free setup
The whole operation is gluten-free. The bakery states 100% senza glutine production and has been in the AIC restaurant circuit since it opened, and its current Find Me Gluten Free listing reports it as a dedicated gluten-free facility. Nothing with gluten comes through the door, so there is no shared-equipment question to ask.
What to order
The menu lists filled cornetti, with the pistachio the one reviewers keep naming, plus Sicilian arancini, pizza, bread, and cakes. The arancini are the tell that this is a Sicilian house.
The move
Go in the morning while the cornetti tray is full. It runs Monday to Saturday and closes Sundays, so plan a weekday or Saturday stop.
