The Sansglu take

The place

Pansy is Anna Fadeeva's second act: she worked as an architect for over a decade before opening this pastry laboratory, named after her favorite childhood flower. It now runs from Via Donatello 22 as an order-ahead lab and online shop rather than a sit-down cafe.

The gluten-free setup

Everything is both gluten-free and lactose-free, with a wide vegan range on top. The lab states it is part of the AIC network for gluten-free dining out, and its current Find Me Gluten Free listing reports it as dedicated gluten-free at the Via Donatello address.

What to order

Reviewers keep naming the sacher, and the case runs to brownies, pain au chocolat, and chocolate brioscine. If you need dairy-free as well as gluten-free, the whole menu already is.

The move

Order ahead on pansy.it and pick up Monday to Saturday, or get delivery. It moved from Via Santa Sofia, so ignore old addresses and go to Via Donatello 22.
