The place

La Pasticciera has run its laboratory on Via Varese in Castro Pretorio, the quiet grid of streets just north of Termini station, since 2014. It's a working bakery, not a cafe: rice, teff, buckwheat, and potato-starch flours go into everything instead of wheat, in a kitchen that makes nothing else.

The gluten-free setup

The entire lab produces only gluten-free baked goods, so there's no wheat on the premises to cross-contact from. La Pasticciera says its own periodic HACCP testing has measured under 5ppm for about three years, well inside Italy's 20ppm legal threshold for gluten-free labeling, though that figure comes from the bakery's own records rather than a named outside lab. It also displays the Italian Celiac Association's Alimentazione Fuori Casa seal and carries a live the verified celiac community dedicated badge.

What to order

The case rotates daily, but look for the pistachio-cream cornetto that keeps showing up in recent reviews, alongside the gluten-free cannoli and pangoccioli the menu lists as regulars, plus a savory pizzetta rossa from the morning bake.

The move

It's a take-away laboratory with nowhere to sit, so La Pasticciera sends customers two minutes down the block to Alei Bar: order a coffee there and they'll let you eat what you just bought. Like many small Roman bakeries, it closes for a multi-week Ferragosto break every August, so call ahead (+39 06 8308 2160) before a summer visit.
