The place
Chef-run Salvadoran counter inside Ground Breaker Brewing on the Central Eastside, the first dedicated gluten-free brewery in the United States. The building's rule is simple: no gluten comes through the door, so the taproom, kitchen, and brewery all run without it.
The gluten-free setup
The entire facility is dedicated gluten-free, kitchen and brewery both, with a dedicated fryer. Community reports back the no-gluten-in-the-building policy with recent votes. Order anything without negotiating with the kitchen.
What to order
The menu lists pupusas as the anchor; cheese and loroco is the filling to ask for. The fried chicken and fries come out of the dedicated fryer, and every tap pours gluten-free beer brewed on site.
The move
Go Wednesday through Sunday afternoons and treat it as the rare taproom where a celiac can order beer and fried food without a single question. A second stall runs at Level Beer in Multnomah Village; the no-gluten-building promise applies to the SE 7th Ave brewpub.
