The Sansglu take
The place
A full-service modern Mexican restaurant on San Antonio Street in downtown Austin. The kitchen nixtamalizes heirloom corn sourced from small Mexican farms every morning. Founded by Guy Villavaso and Larry Foles, who previously built Z'Tejas, Eddie V's, and Hopdoddy. Chef Kevin Taylor runs the kitchen, bringing experience from the Inn at Little Washington and the Mansion on Turtle Creek.
The gluten-free setup
The entire kitchen is reported dedicated gluten-free. No wheat flour is used anywhere in food preparation. The kitchen also operates seed oil free, using Zero Acre Oil (a sugarcane-based cooking fat) instead. Beverage program details regarding gluten content have not been independently confirmed, so ask your server about specific drinks.
What to order
The menu lists sopes, tostadas, and fresh corn tortillas, all built on the house-nixtamalized masa. Look for the seasonal tostada and the cocktail menu, which is crafted around the same grain-free kitchen.
