The place
A dedicated gluten-free bakery at 7413 Burnet Road in North Austin. Founder Rachel Metts started at Austin farmers markets, moved through a ghost kitchen phase, and opened this brick-and-mortar location in mid-2026. The bakery is named after her adopted black lab, Charli Girl. Sweet Charli Girl also wholesales to roughly 20 Austin coffee shops, including Jo's Coffee and Cherrywood.
The gluten-free setup
The entire bakery is reported as a dedicated gluten-free facility. All baking happens on-site with no wheat flour in the building. The founder is gluten intolerant and built the operation around strict avoidance. This is a bakery only, not a coffee shop or cafe.
What to order
The strawberry crumble bar and the mango sticky rice cookie are the signatures that built the farmers market following. Look for the cookie filled cookies, which layer a cookie shell around a soft filling. Popular items sell out early in the day.
The move
Go morning. Hours are Tuesday through Friday 7am to 3pm, Saturday and Sunday 8am to 4pm. The Austin Chronicle named it Best of Austin 2025. If you arrive after noon on a weekend, the top sellers may already be gone.
