The place
Padre started life as Tacos Padre, a street-food stall in Borough Market's covered trading floor, and it still runs as a counter with market benches rather than a sit-down restaurant. Founder Nick Fitzgerald cooked at Pujol in Mexico City before setting up in London, and the stall butchers and marinates its meats from scratch. Expect a lunch queue on market days.
The gluten-free setup
The food menu is built on fresh corn tortillas, so every taco starts gluten-free rather than being adapted. Celiac diners report a dedicated fryer and dedicated kitchen space, with staff who change gloves and ask about allergies. Some bottled drinks contain gluten, so the safe claim covers the food, not every fridge shelf.
What to order
The menu lists tacos al pastor, a fried fish taco, and tortilla chips with salsa and guacamole. Look for the taco selection on fresh corn tortillas; celiac diners single out the fried fish taco because it comes from the reported dedicated fryer.
The move
