The Sansglu take
The place
Glummy is a small dedicated gluten-free laboratorio (their own word for it) at Via Urbana 142, on a Monti street that runs from Piazza della Suburra near the Cavour metro stop up toward Termini, through the rione's antiques-and-vintage core. It's counter service, not a sit-down restaurant: reviewers describe a handful of chairs inside, more grab-and-go than table service. Every item on its Glovo and Just Eat menus is a gluten-free version of an Italian bakery staple, with no gluten-containing line on site to cross-contact from.
The gluten-free setup
the verified celiac community currently lists Glummy as a "Dedicated Gluten-Free Bakery" with a live "Reported to be dedicated gluten-free" badge, and that's the only kind of listing it carries: we found no shared-kitchen or shared-fryer language on any menu, site, or review. Dairy-free is reported by 17 the verified celiac community users, which is a community flag, not a stated house policy covering the whole menu. There's no third-party lab certification on record, so read the dedicated label as a strong, current, crowd-corroborated report rather than a certified one.
What to order
The menu lists five panzerotti under "Panzerotti della Nonna," including the Panzerotto alla Carbonara (egg, guanciale, cheese, 7.50 euros) and Panzerotto Salsiccia e Friarielli (7.50 euros), plus a "Glumbrioche" line of filled brioche buns (pistachio and almond, hazelnut praline, cream and sour cherry) and suppli in classico, cacio e pepe, amatriciana, and carbonara versions. We haven't eaten here ourselves; this is what the current Glovo and Just Eat listings show, not a taste verdict.
The move
Glummy's own Instagram bio calls itself "the only gluten-free place open at night too" and says "Aperti 24h, Lunedi chiusi" (open 24 hours, closed Mondays). Facebook's posted hours for the same shop say Tuesday through Sunday, midnight to 4pm, which is not around the clock. The one point every source agrees on is that it opens at midnight and stays dark on Mondays. Past that, check the live hours on Glovo or Just Eat, or call +39 06 6922 0716, before you plan a 2am panzerotto run.
