The Sansglu take
The place
A dedicated gluten-free bakery on 18th Street in Adams Morgan, opened in 2014 by Mike Koritko, who got his celiac diagnosis in high school and started baking bread with his mother in 2004. A second shop runs in Sterling, Virginia.
The gluten-free setup
Everything in the bakery is gluten-free, and community reports keep the dedicated status current within days. Allergens beyond gluten are labeled per item.
What to order
Celiac diners keep coming back to the everything bagel for a chew regular bagels rarely survive translation with. The menu also lists brioche loaves, chocolate babka, and breakfast sandwiches.
The move
Weekend mornings sell through fastest; the Sterling shop runs Thursday to Monday and closes Tuesday and Wednesday, so check which side of the river you're on.
