The Sansglu take
The place
Japanese hand roll counter with a fully separate gluten-free kitchen. Open format means you watch the chefs build each temaki to order, rice to nori to filling.
The gluten-free setup
Dedicated gluten-free kitchen, separate fryer, and isolated prep. Every GF order runs its own line from start to finish, no shared equipment or surfaces with wheat items.
What to order
The Plant Based and Coconut Shrimp temaki are the anchors, crispy and built fresh. Tuna Tartare if you want raw. Mochurros with Lemon Curd for dessert, something you can't usually get fried and still eat. Skip the regular tempura here and order the GF version instead.
The move
Temaki bar moves fast at counter. Order what you want and watch it happen in front of you. Lunch before 1pm is quieter if you prefer less crowd.
