The place
Japanese串揚げ (skewered fried appetizers) spot built entirely around gluten-free cooking. Every item on the menu is GF, making it a rare full kitchen operation where nothing wheat-based crosses the counter.
The gluten-free setup
Dedicated fryer and prep equipment throughout. The whole kitchen runs gluten-free end to end, so there's no wheat flour on the premises and no shared cooking lines to navigate.
What to order
Book the kushiage omakase and let them send out skewer after skewer, each one crumbed in rice flour and fried in rice oil. It is the deep-fried specialty that is normally built entirely on wheat breadcrumbs.
The move
The whole counter is set up without wheat, so the sauces and sides are safe too, not just the batter. It is a roughly six-seat, reservation-only room in Ginza, so treat it as a planned dinner and book well ahead. For a celiac, a dedicated kushiage omakase is a genuinely rare night out.
