The Sansglu take
The place
Storefront Japanese spot in Roppongi running a fully dedicated gluten-free kitchen. The entire operation is GF-only, which means the bones of the place are built around that constraint from day one.
The gluten-free setup
Dedicated gluten-free kitchen and dedicated fryer. No wheat flour on the premises. Every item that leaves the kitchen is naturally or explicitly GF by design.
What to order
Order the ramen, the gyoza, or the karaage set, the wheat-heavy Japanese dishes celiacs usually have to skip, then finish with something from the dessert case. This is a proper sit-down meal, not a single safe plate.
The move
The whole kitchen is gluten-free, so you read the menu like anyone else and order without a speech. T's Kitchen was the first restaurant in Asia certified by the Gluten Intolerance Group, which is about as strong as a dedicated signal gets in Tokyo. Book ahead, since the Roppongi room is small.
